Baked Lemon Sage Tilapia

Serves 4
2 Tbsp. extra virgin olive oil
4 tilapia fillets, (6 oz. each)
1 Tbsp. Dijon mustard
2 Tbsp. fresh lemon juice
2 Tbsp. finely chopped fresh sage
1 Tbsp. fresh lemon zest
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
Nonstick cooking spray

  Preheat oven to 350 degrees F.

Prepare a baking dish with nonstick cooking spray. Lay fish onto the baking dish; spread Dijon on top of each fillet, then drizzle fish with lemon juice and sprinkle with sage, lemon zest, sea salt and pepper.

Bake for 15 minutes or until fish is completely cooked.

Remove from oven; serve warm.
