2 heads cauliflower, riced (about 6 cups)
1/2 cup grated Parmesan cheese
1/4 cup unsalted butter, divided
3 garlic cloves, minced
Salt and pepper to taste
3 tablespoons chopped chives
Place the riced cauliflower in a stockpot with enough water to cover by 1 inch. Bring to a boil. Cook until tender, about 10 minutes. Strain the cauliflower. Reserve ¼ cup of the liquid.
Return the cauliflower to the stockpot along with the reserved liquid. Mash or puree with an immersion blender to desired consistency. Mix in half of the butter, plus Parmesan and garlic. Salt and pepper to taste. Transfer to a serving bowl. Top with remaining butter and chopped chives.
Makes 6- 8 servings.
NOTE: For a vegan version, use an extra ¼ cup of the cooking liquid in place of butter. Substitute ¼ cup nutritional yeast, or to taste for the Parmesan cheese.
